Which businesses require a grease trap installation?
Typically cafe's, restaurants, bakeries, take-away outlets, butchers shops and various other food preparation businesses. A grease trap is designed to keep the fats and oils out of the authorities sewer lines but they also serve as a means of preventing blocked drains on your property. The main reason for complying with the regulations is that your business will not be able to open unless the list of requirements regarding grease trap installations are met. Most council authorities and the health department regulate that grease traps are installed and inspected to meet their conditions.
What size grease trap does my site need?
Refer to the table below as a guide. Keep in mind though that if you are not a business that has sit down customers such as a take away or a food preparation business then you fit into the category of grease traps fewer than 69 seats. A point of caution is that if you have a small grease trap and a large water usage then you may find that you have to have your grease trap pumped out regularly. As pump outs are over $200 each time, the cost of installing a larger system may be the most cost effective option. With this in mind, a bigger grease trap could be considered in relative terms as cheaper.

How reguarly do I need to have the grease trap cleaned out?
Many local authorities require that the system be cleaned out every 13 weeks to start with. A Trade Waste Inspector will visit your premises from time to time to inspect the grease build up. He will then decide that your system needs to be cleaned out more or less often. It is not based on an opinion but on the measurement the Inspector records. Bigger systems always cost less in the long run, because the on-going costs are less.

Can I have an above ground tank instead of an in-ground grease trap?
You can, but if the kitchen floor is lower then the top of the grease trap then in this case you will need a pump to push the water into the trap. The pumps are costly and sometimes the installation costs are very similar between an above ground and in-ground system.
If gravity fall is not obtainable on a below ground system then risers are available in various sizes.
